Titch's Tatties And Other Tasty Vegetables
Little Menaces Macaroni Cheese
- 100g small shape pasta
- 350ml full fat milk
- 75g spinach
- handful grated cheddar cheese
- cook the pasta according to the instructions on the packet
- melt a little butter in a saucepan and add a tablespoon of flour and gradually add the milk
- bring to the boil stirring continuously while it thickens
- drain and sieve the pasta
- wash the spinach add to the empty pasta pan, put the lid on and let the spinach wilt
- finely chop the spinach and add to the suace along with a handful of cheese
- chop, mash or puree the pasta to suit your baby
Veggie Pasta
- 150g carrots diced
- 150g broccoli
- 75g green beans
- 75g small pasta pieces
- handful cheddar cheese
- 135ml full fat milk
- boil the carrots for 5 minutes
- add the green vegetables and boil for another 5 minutes or until the vegetables are tender
- cook pasta in a separate pan according to the instructions on the packet
- puree the vegetables and cheese and add a little milk till you get a desired consistency
- add to the pasta
Lovely Lentils
- 75g red lentils washed and drained
- 150g parsnips cubed
- 200g carrots cubed
- 300g potatoes peeled and cubed
- 600ml home made vegetable stock
- put the lentils and vegetables into a pan with the stock
- bring to the boil, cover and simmer for 40 minutes or until the lentils are soft
- puree to a smooth consistency
Sheep Pie - Without The Sheep!
- 125g butter
- 125g leeks finely chopped
- 1 shallot finely chopped
- 175g red lentils
- 500ml home made vegetable stock
- 2 tomatoes skinned and deseeded
- 900g potatoes peeled and cubed
- handful grated cheddar cheese
Preheated oven 220C or 400F or gas mark 6
- melt the butter in a saucepan and add the onions and leeks. Cook slowly for 10 minutes until soft
- add lentils and stir for a minute, add the stock bring to the boil then reduce the heat and simmer for 15 minutes or until the lentils become soft
- remove from the heat and stir in the tomatoes and leave to cool
- boil the potatoes until tender, drain and mash, add a knob of butter and the cheese
- spoon the vegetable and lentils into an oven proof dish and cover with mashed potato
- bake for 20 minutes or until the top is crisp and golden
