Little Ones Leek & Courgette Soup
- 300g courgettes sliced
- 150g leeks chopped
- 2 pototoes sliced and peeled
- 1 onion sliced and peeled
- 2 large tomatoes skinned deseeded and chopped
- 900ml vegetable stock (homemade)
- heat a llittle oil in a saucepan and add the courgettes, leeks, potatoes and onions, fry slowly for 5 minutes
- Add the tomatoes and stock
- Bring to the boil then simmer for 25 minutes
- Puree to a smooth, thick texture adding a liitle extra liquid where needed
Mighty Minestrone
- 1 small onion diced
- 1 small clove garlic
- 2 sticks celery
- 2 carots peeled and diced
- 1 potato peeled and diced
- 200g tomatoes (skinned and deseeded)
- 1 courgette diced
- 75g green beans
- 1 pint chicken stock or vegetable stock (homemade)
- 1 small can haricot beans
- handful peas
- 25g small pasta shapes
- heat a little oil in a pan, add the onion and garlic and fry slowly for 5 minutes,
- add the celery and root vegetables and cook slowly for a further 5 minutes
- add the remaining vegetables, apart from the peas and the stock, bring to the boil
- cover and simmer for 25 minutes
- add the haricot beans, peas and pasta shapes and cook for another 10 minutes
Little Rascals Vegetable Soup
- 1 small onion chopped
- 2 carrots chopped
- 1 medium leek chopped
- 1 medium potato diced
- 1/2 swede diced
- 900ml chicken or vegetable stock (homemade)
- heat a little oil in a saucepan and add the onion, sweat for 5 minutes
- add the vegetables and cook for 5 minutes
- add stock, boil and then simmer for 40 minutes or until swede is tender
Tatty-Leeky Soup
- 450g leeks and 450g potatoes sliced
- 1 onion sliced
- 1 litre vegetable stock (homemade)
- heat a knob of butter in a saucepan. Add the vegetables and sweat for 5 minutes
- add the stock, bring to the boil then simmer for 25 minutes
- puree adding a little full fat milk if needed to improve the consistency
Lickety Split Lentil Soup
- 1 onion chopped
- 2 carrots sliced
- 1 clove of garlic
- 200g red lentils
- 1 litre homemade vegetable stock
- heat a little oil in a saucepan add the vegetables and sweat for 5 minutes before adding the lentils and stock
- boil, then cover and simmer for 30 minutes
- puree in a blender or push through a sieve
